Pastilla Triangles with Chicken or Lamb, Herbs and Spices
(makes 30 to 50 triangles, depending on size)
1 lb (500 g) cooked chicken or lamb, cut into small dice
5 Tablespoons toasted, coarsely chopped pignoli
6 Tablespoons toasted, coarsely chopped almonds
6 Tablespoons coarsely chopped golden raisins
1/2 teaspoon saffron
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon freshly ground pepper
1 teaspoon freshly grated ginger
5 Tablespoons chopped fresh cilantro
5 Tablespoons chopped fresh mint
4 Tablespoon full flavored honey
1 pkg frozen phyllo dough
1/2 pound (250 g) melted butter
4 Tablespoons full flavored honey
1. Mix all of the above except last two ingredients (butter and 4 tablespoons honey)
2. Melt the butter and add in the honey
3. Place a sheet of filo on the counter top and paint with the butter/honey mixture
4. Place another sheet of filo directly over the first and paint again: repeat
5. Cut the filo into three sections lengthwise or four sections crosswise - depending on the size you wish them to be - and place a tablespoon or so near the bottom of each lengthwise third
6. Fold the filo in a triangle shape from the lower right hand corner to the left side of the section, in the same way a flag is folded. Continue to roll the filo un in a triangular shape until the end of the section
7. Paint the packets with the melted butter/honey mixture
8. To cook immediately, bake in a 400 degree oven for 13-18 minutes, until golden brown, turning them once halfway through the cooking
9. These can be frozen for two months in their uncooked state. Just place them on a plate or baking sheet and freeze. When they are frozen solid you can place them in a freezer bag for storage.
